`` Kimoto'' is a traditional method that requires more time and effort than regular sake brewing.

A honjozo sake made with Kimoto that has a deep richness, a sharp aftertaste due to just the right amount of acidity, and no unpleasant tastes, allowing you to enjoy the flavor of rice.
While the rich umami envelops the tongue, the refreshing aftertaste is like a mother who is sometimes gentle and sometimes strict.

We use Nada miyamizu (natural water from the Mt.Rokko system), which has been selected as one of the 100 best waters, as our brewing water.
