Still, we named it NADA88 to reflect the passion of Sawanotsuru, who continues to be particular about rice in Nada region.
“OR2271" is a new sake rice produced in the project. Junmai Daiginjo-shu NADA88 is the result of taking full advantage of the characteristics of this sake rice. From the rice washing to the soaking process, delicate handling was required, and testing the sake brewer's skill. We were also very particular about the brewing blends and fermentation temperatures and strived to make the most of the sweetness derived from the raw ingredients and to create a highly aromatic sake.
